Step 1: Raw Materials

The leaves are harvested by hand, usually ranging between just the unopened bud to the top three leaves and the bud, depending on the tea being created. After plucking, the leaves are sorted for uniformity and any stems, twigs, broken leaves, etc. are removed.

Step 2: Withering

The leaves are laid out to wilt and wither for several hours to prepare them for further processing. Tea leaves, even fresh tender ones, aren’t very pliable. Without withering, they would shatter and crumble when rolled and shaped. During withering, the leaves are very gently fluffed, rotated and monitored to ensure even exposure to the air.

Step 3: Sieving

The withered leaves are passed through the sieve machine to filter out impurities and metal fragments in the tea. The tea will go through the cutting process 5 times in various sieving machines.

The final step in this process involves shaping the tea into pellets just before it exits the cutting machine.

Step 4: Fermentation (Oxidation)

Oxidation starts as soon as the leaf cell walls rupture with the starting of the CTC process. Immediately after the completion of CTC operations, the leaves are spread on the floor or continuous fermenting machine (CFM) without any wastage of time. In tea, oxidation enables the formation of new compounds at a molecular level. This results in the exclusive brown color and astringent flavor of black tea.

Step 5: Drying

It is the process in which the moisture level in the made tea is brought down to around 3% level using a dryer by stopping all sorts of enzyme activities and arresting the oxidation for a stable product with good shelf life.

Step 6: Sorting

Sifter sorts tea into pieces of various roughly equal sized teas. Tea is further subdivided into different grades of as per the qualities within each of these sizes. In Vietnam, CTC tea is segregated into four main sizes BOP, BP, PD and PF. In some other countries, it could be graded as BOP L, BOP S, BOP, BOP SM, BP, BP SM, OF, PD and DUST. The sorted teas are then packaged for storage and shipment.
